Made a few changes due to access to ingredients. Used JImmy Dean Hot breakfast sausage drained, instead of green bell I had a poblano, and used half and half with a slight cornstarch slurry to get the consistency I wanted. Also, omitted the cheese it didn’t need it at all! Will be making this and versions of it for sure in the future!

Hi Stephanie! I’m sorry it wasn’t a hit for you. Cajun seasoning blends can vary quite a bit by brand — some are much saltier or more intense than others — which can definitely affect the overall flavor of the dish.

If you try it again, you might start with less seasoning and adjust to taste, especially if your blend is particularly bold.

Pastalaya! As someone who doesn’t care much for rice, this was especially wonderful. I didn’t have andouille sausage but regular sausage and some Tony’s seasonings gave it a nice kick. It does make a bunch, but I have some frozen that will come in very handy sooner than later. Thanks for the recipe.

This is delicious! I stumbled across this recipe and it’s been a go to! We’ve made this 4 times in the last two weeks. I make this as written, except we do turkey sausage and add shrimp along with it. It’s such a delicious dish, thank you for sharing, it’s my husbands favorite meal.
