My fiancé and I LOVE this recipe!! We make it at least once a month. I personally love a shallot so I usually use 2 small ones. And I pair the chicken with potatoes and roasted green beans. Soooo tasty

Hi Chelsey! Yes — chicken thighs work great here. Just sear them the same way, but cook them a bit longer because thighs take more time to reach 165°F. Boneless thighs usually need about 6–7 minutes per side, depending on thickness. The rest of the recipe stays exactly the same, and the sauce pairs really well with the richer flavor of thighs.

Very tasty recipe! Didn’t have shallot so I used 1/3 of onion. Other than that I followed recipe and enjoyed it so much; I’m going to add it to my make again recipes 🙂

Then to add it back after the sauce was done. I figured to take it out, when sauce was done, I added fresh spinach…it was great..

I made this today and it’s delicious! I didn’t have shallots so I used an onion. I served with angel hair pasta and your roasted tomatoes side dish. 😋 Yummy.
