Hi Michele! Yes! You can swap the raspberry jam for a chocolate filling — it works great with pistachio. A simple ganache (chocolate + warm cream) or even a thick chocolate spread will hold up well between the cookies. Just make sure the filling is cool and thick so it doesn’t ooze out.
