This was really good! I didn’t have fresh parsley or potatoes so I used dried parsley and frozen hash browns. I also didn’t cube the steak and put it back in the pan because I didn’t want it well done. I layered the hashbrowns, steak, sauce then the topped with the egg. I wasn’t sure about it, because of the vinegar, but if you like vinegar this is a nice savory, high protein, filling breakfast.

Hi Kiana! Yes, since the eggs here are just baked on top (not mixed in), you can replace them with sliced avocado, crumbled feta or goat cheese. If you want a warm option, add sautéed mushrooms or white beans to the hash for extra protein instead.

Hi, I love this recipe and will try it but I have an egg intolerance. What could I use as an egg substitute so I can still have this dish for breakfast. Breakfast for me right now is limited because of my egg allergy. I can consume eggs cooked into foods but cannot eat eggs in their natural state cooked.
