Why You’ll Love this Protein Coffee Recipe

While I’m a sucker for a high-protein breakfast recipe like a protein breakfast sandwich or protein pancake bowl, sometimes I just don’t have the time to plan ahead.

Enter this protein coffee! It’s so popular on social media for good reason. I started making it on busy mornings because I wanted something to balance out my coffee when I’m on the go or don’t have an appetite. I aim for at least 25g of protein first thing, and this recipe makes it easy.

Top recipe benefits:

  • Quick (5 minutes or less)
  • Keeps you full with 20–25g protein
  • Creamy like a latte, but lighter
  • Easy to customize with powders, syrups, or milk of choice
  • Works iced or hot!

It’s creamy, flavorful, and doesn’t leave me with that jittery empty-stomach coffee crash!

Tested Tips Before You Start…

  • Use a protein drink that you really enjoy the flavors of because it really comes through! I love Fairlife core power protein drinks.
  • Use a very large glass or tumbler to fit the whole thing! Or mix it in a large mason jar and do two separate servings (you’ll feel like you’re enjoying 2 coffees!).
  • Blend milk with your favorite vanilla protein powder if you don’t have a protein drink on hand.

Step 1. Brew espresso: Pull two shots of espresso using your machine or a stovetop moka pot.

Step 2. Pour milk over ice: Fill a tall glass with ice and the protein drink.

Can I Use Cold Brew Instead of Espresso?

Protein Powder. You can use whatever protein powder you have on hand and add 1 Tablespoon of cocoa powder. I’ve made this with collagen and vanilla protein powder before!
Meal Prep. Measure out individual bags of banana, peanut butter, and chia seeds. Freeze for up to 3 months. Dump it all into the blender then add the milk and protein powder and blend.
Peanut Butter. Sub the peanut butter with almond butter, cashew butter or tahini for a nut-free option.
More Mix-Ins. Try adding chia seeds, collagen, hemp hearts, or your favorite supplements.
Coffee. Swap some of the milk for brewed cold brew coffee for a morning pick-me-up.

  • Frozen raspberries: they’re cheaper and often more fresh, especially when they aren’t in season.
  • Frozen blueberries: you can buy a huge bag for cheap and make this smoothie multiple times!
  • Milk: any milk like whole milk, almond milk, or cashew milk works.
  • Nut butter: adds flavor, texture, and healthy fats to keep you full.
  • Flax meal: adds fiber for gut health and to keep you full. This is optional.
  • Protein powder: Choose a vanilla protein powder with about 24g of protein. I like one sweetened with monk fruit!

Reduce the amount of milk to 1/2 cup and add a handful of ice. Use a high-speed blender and blend until all of the pieces of ice are broken up. Adjust consistency with more milk as needed!

How to Make Dairy-Free Eggnog

Here are the simple steps, with photos, to make this dairy free eggnog recipe. Skip to the recipe card for the printable version.

Step 1. Warm the Milk and Mix Eggs. Combine the coconut milk and dairy-free milk in a medium saucepan and bring to a gentle boil over medium heat. 

Step 2. Combine Eggs and Sugar. Whisk the raw eggs and sugar in a separate bowl.

Step 3. Temper the Eggs. Slowly add a bit of the hot milk mixture to the egg mixture, whisking constantly, to bring the temperature of the eggs up slowly. 

Step 4. Heat the Eggnog. Pour the eggnog back into the saucepan and add the spices. Cook over medium-low heat until it reaches 160°F (a safe temperature for homemade eggnog).

Step 5. Let it Thicken. Continue to cook until the mixture thickens slightly. It should easily coat the back of a spoon. 

Step 6. Strain and Chill. Strain it through a mesh seive, and cool to room temperature. Transfer it to a jar or pitcher, cover, and refrigerate to chill for 2-3 hours or overnight.

Expert Recipe Tips

  • Use fresh ground nutmeg: Hold a citrus zester over the top of the cup of dairy free eggnog and grate it back and forth to sprinkle on top.
  • Know when it’s thick enough: stop cooking and chill when it coats the back of a spoon.
  • Don’t skip straining. This will remove any small bits of egg that may have cooked too much during the heating process. It’s important for the most rich and creamy dairy free eggnog.
  • Mix the milk into the eggs slowly: this brings the temperature of the eggs up slowly so it doesn’t curdle.
  • Thin it out after chilling. Homemade eggnog continues to thicken as it cools. Add more dairy free milk after chilling as needed.

Mocktail: Serve eggnog chilled in your favorite fancy mug, coffee mug or wine glass with a cinnamon sugar rim. Top it with dairy free whipped cream, fresh nutmeg, and a cinnamon stick.

Spiked dairy-free eggnog: Add your favorite rum, brandy, bourbon or whiskey and serve with whipped cream and nutmeg. You could also add peppermint scnapps, white chocolate liquor, or another spirit.

What’s the best alcohol for dairy free eggnog?

The best alcohol to spike your eggnog is rum, brandy or bourbon. My first choice would be a brandy, but I also love a spiced rum because it’s more subtle and goes well with the eggnog spices.

Is eggnog served hot or cold?

Eggnog is typically served chilled with fresh nutmeg. However, that doesn’t mean it can’t be served warm on a chili night! Heat it slowly in a saucepan on the stove.

What can I add to eggnog?

You can spike your eggnog with rum, add nutmeg on top. Beyond that, you could add chocolate or orange liquor, ground spices like all spice and cloves or even peppermint schnapps.

Can homemade eggnog make you sick?

This all depends on the recipe and the quality of the eggs. Store bought eggnog is pasteurized and if you buy eggs that are pasteurized then you’re good! However, you can also bring the eggnog base to a temp of 160°F while you’re cooking to ensure it’s safe, which is what we do in this dairy free eggnog recipe.

Why is eggnog a Christmas drink?

Eggnog’s roots date back to British aristocracy when the wealthy would drink this custard-based beverage topped with pricey spices during the winter. Because nutmeg is such a prevalent flavor in eggnog, it makes it perfect for the holidays.

  • Whisk together the dairy free milk and coconut milk in a medium saucepan over medium-high heat and and bring to a gentle boil.
    2 (13.5 ounce) cans unsweetened full fat coconut milk, 1 1/2 cups dairy free milk
  • While the milk is heating, whisk together the egg yolks and coconut sugar until combined in a large bowl.
    6 large egg yolks, 1/2 cup granulated sugar
  • Pour a small amount of the warm milk into the egg mixture, whisking continuously. Repeat with more milk gradually until the milk mixture and egg mixture are combined. This is known as tempering, and slowly increases the temperature of the eggs so they don't curdle.
  • Pour the eggnog back into the saucepan and add the cinnamon, nutmeg, salt, and vanilla. Heat over medium-low until it reaches a temperature of 160°F and the mixture coats the back of a spoon.
    1/4 teaspoon cinnamon, 3/4 teaspoon fresh ground nutmeg, 1/2 teaspoon salt, 1 vanilla bean pod
  • Strain the dairy-free eggnog through a fine mesh sieve to remove any small bits of cooked egg that may have formed. Allow the eggnog to cool to room temperature. Transfer it to a pitcher, cover and refrigerate until chilled (2-3 hours) or overnight.
  • The eggnog will continue to thicken as it chills. Stir in more non-dairy milk until it reaches your desired consistency.
  • When you're ready to serve, dip the glass upside down in maple syrup, honey, or caramel then dip it into a mixture of cinnamon sugar. Spike with dark rum if desired and top with nutmeg.

This apple cider sangria is everyone’s favorite fall cocktail! It’s full of apple slices, cinnamon stick, ginger, and white wine. Serve it with a cinnamon sugar rim for the most delicious drink for a fall party or for Thanksgiving.

I love making recipes with seasonal fruit. Picking fresh apples during apple season and using them in healthy apple crisp and apple banana bread is the best.

But apples aren’t just for baking! Adding them to this apple cider sangria or crock pot apple butter are delicious. And I especially love to put them in savory meals like sheet pan pork chops and sausage stuffed acorn squash.

Pair those meals with this sangria with apple cider for the perfect cozy fall night or serve it at a fall party or Thanksgiving. It’s my favorite cocktail because there’s so many ways to to make it with different fruits, cocktails, or garnishes. You can even cut out the fruit into fall shapes like in this Thanksgiving sangria.

  • Dry white wine: I love Pinot Grigio in sangria because it has a fruity flavor with notes of pear and apple. Sauvignon blanc is another great choice.
  • Apple cider: any variety or brand works!
  • Orange liqueur: we used Triple Sec. A good apple brandy is a great option.
  • Apple butter: adds more sweetness and apple flavor to the cider!
  • Fresh fruit: I like granny smith and honey crisp apples.
  • Whole cinnamon sticks: they add warm cinnamon spice and look festive.
  • Club soda or ginger beer: I love the ginger flavor from ginger beer! Add a splash to each glass before serving.

Recipe Variations

  • Blood oranges: you can use blood oranges instead of naval oranges.
  • Pears: this fall fruit would be another great addition!
  • Brandy: if you prefer this or have this on hand, feel free to sub this for orange liquor.
  • Star anise: add some of these fun fall spices to the sangria with the cinnamon sticks. They add depth of flavor and they look pretty!
  • Red wine (Pinot Noir): turn this into a red wine sangria by using a Pinot Noir instead of Pinot Grigio.

How to Make Apple Cider Sangria

Step 1. Prep the Fruit. Slice the oranges and apples, with the peels on.

Step 2. Add It to the Pitcher. Add the sliced fruit to a large pitcher with the pomegranate, cinnamon sticks.

Step 3. Pour in the Wine. Add the wine and remaining ingredients and stir to combine.

Step 4. Refrigerate. Give it all a stir then refrigerate for at least 3 hours, but ideally overnight.

Step 5. Rim the Glass. Dip the glass into maple syrup or caramel sauce then a shallow bowl of cinnamon sugar.

Step 6. Serve. Pour the apple cider sangria over ice, adding some of the fresh fruit. Finish with a splash of ginger beer and garnish with a cinnamon stick.

Make it a Mocktail

This drink can be delicious and festive without the the alcohol! Omit the wine and triple sec and replace it with orange juice and more apple cider. Serve it with ginger beer or a fizzy orange soda, like Olipop, for kids.

Expert Recipe Tips

  • Don’t skip the chill time. You should make sangria at least 3 hours in advance though overnight is ideal. This gives the fresh fruit time to infuse with the wine. The punch won’t be as well-balanced or fruit if you cut it short. I like to let mine chill in the fridge for at least 8 hours, but ideally overnight.
  • Taste and adjust. Homemade cocktails are personal preference a lot of times. If you want it sweeter, add more apple cider. Want it stronger? Add more triple sec or brandy to the mix.
  • Get creative with fruit. You can add whatever fruit you have on hand. Bonus points if it’s seasonal fruit like pears, figs, or cranberries.

Storage and Make-Ahead

Storage: Store leftover sangria in the pitcher in the fridge for up to 3 days. If you want to store it longer, remove and discard the fruit and store the cocktail separately.

Make-Ahead: you can make a bit batch of white wine apple cider sangria up to 2 days in advance. In fact, making it the day before is ideal to allow the fruit and wine to mix and infuse.

  • 3 honey crisp apples sliced
  • 1 orange sliced
  • 2 cups pomegranate aerils
  • 4 cinnamon sticks
  • 1 (750 ml) bottle of white wine I used Pinot Grigio
  • 2 1/2 cups apple cider
  • 3/4 cup Triple Sec or apple brandy
  • 2 tablespoons pure maple syrup plus more for the rim
  • 1/2 cup apple butter
  • 1 cup club soda or ginger beer
  • Cinnamon sugar for the rim

Instructions

  • Add all of the fruit to a large pitcher.
    3 honey crisp apples, 1 orange, 2 cups pomegranate aerils, 4 cinnamon sticks
  • Add the remaining ingredients, except the soda, and mix well. Stir and refrigerate until chilled, at least 3 hours, but ideally overnight. You can make this up to 48 hours before serving. The longer it chills, the more the drink soaks up all the fruit flavor.
    1 (750 ml) bottle of white wine, 2 1/2 cups apple cider, 3/4 cup Triple Sec, 2 tablespoons pure maple syrup, 1/2 cup apple butter
  • When you're ready to serve, add cinnamon and sugar to a shallow bowl or plate and maple syrup in separate dish. Dip the rim of the glass into the maple syrup and then the cinnamon sugar.

Cucumber lemon water is one of the easiest ways to make plain water taste really fresh and good. All you need is sliced cucumber, fresh lemon, and water, then let it chill so the flavors infuse.

I’ve tested this a lot, and here’s the key. You can drink it after an hour, but if you let it sit overnight, the flavor gets so much better. It’s crisp, lightly citrusy, an makes you want to keep refilling your glass all day.

This is the version I keep in the fridge on repeat, especially in the summer or when I just need something refreshing that isn’t sugary.

Why You’ll Love This Cucumber and Lemon Water

This cucumber lemon water is simple, but the difference is in how long you let it infuse. After making it daily all summer, I found the sweet spot is about 8–12 hours. That’s when the cucumber and lemon really release their flavor without turning bitter.

It’s the kind of thing you make once and end up sipping on all day. My kids even ask for it when they see it in the fridge.

Ingredients You Need

  • Fresh cucumbers: Make them thinly sliced. (You can also use a vegetable peeler to make ribbons.) No need to peel the cucumbers prior to adding them to the water. The kind of cucumber does not matter; regular cucumbers, organic cucumbers, or english cucumbers are great.
  • Fresh lemons: Fresh lemon slices and lemon juice add so much flavor. Slice and pop out the seeds to avoid them getting into the drink (optional).
  • Mint leaves (optional): fresh herbs brighten up all summertime drinks.
  • Water: Use filtered water from the fridge, plain water from the sink, or bottled water.

How to Make Cucumber Lemon Water

To make cucumber lemon water, add thinly sliced cucumber and lemon to a pitcher, fill with water, and refrigerate for at least 1 hour, ideally 8–12 hours for the best flavor.

  1. Cut the cucumber and lemon: Thinly slice the lemon and cucumber and place them in the bottom of a pitcher. Add if you want to!
  2. Mix in a large pitcher: fill the pitcher with 8-10 cups of tap water or filtered water and mix gently.
  3. Refrigerate: Let it infuse in the fridge for at least 1 hour. The flavor gets stronger over time, so refrigerate longer if you can. I find overnight (12 hours) yields the best flavor.
  4. Serve: pour it over ice cubes and add more lemon slices, cucumber slices, and mint to serve.

Recipe shortcut: if you don’t have time, this drink is still delicious if you make it right away. Mix it with very cold water and ice to serve.

How Long Do I Keep Cucumber Slices in Water?

Cucumber lemon water is ready to drink after 1 hour, but the best flavor happens after 8–12 hours in the fridge. That’s when the cucumber and lemon really infuse into the water and taste fresh and balanced.

Don’t leave it longer than 24 hours. After that, the lemon rind can start to taste bitter. If you want to keep it longer, just remove the slices and keep the water chilled.

Recipe Variations

  • Omit the lemon and mint: You can just use cucumbers alone if you aren’t a fan of lemon or mint. It’s up to you! 
  • Add more citrus: this lemon cucumber water is delicious with grapefruit, oranges, and limes.
  • Fruit infused water: Add strawberries, blueberries, blackberries, peaches, or melon and pair it with fresh herbs like basil or mint.
  • Watermelon basil: cut the watermelon into cubes and infuse the water with fresh basil.
  • Frozen edible flowers:  Add water and edible flowers to ice cube trays and freeze them solid. Add the ice cubes just before serving to a crowd.
  • Make it a cocktail: Combine the cucumber lemonade with a shot of vodka and simple syrup. Top it with a little lemon-flavored seltzer water if you find the vodka to be too strong of a flavor.

Can I Reuse the Cucumber and Lemon for Another Batch?

You can refill the pitcher once, but the flavor will be much lighter the second time. For the best taste, I recommend using fresh slices each day.

  • Tequila: I used silver tequila, which I prefer for cocktails like margaritas and mules. You can use reposado tequila and añejo tequila interchangeably.
  • Agave: Agave adds sweetness, without the need to make a simple syrup. You can make one if you have sugar on hand, or omit this altogether to make it less sweet.
  • Lime juice: Use fresh limes, no exception! It makes such a difference. We love this handheld juicer with a measuring cup.
  • Ginger beer: Any quality ginger beer will work for this recipe. I used a lite ginger beer for lower sugar and calories.
  • Fresh mint leaves: Classic Moscow mules always use fresh mint and it pairs really well with tequila too.

How to Make a Tequila Mule

  1. Fill cocktail shaker. Add the tequila, agave, and lime juice to a cocktail shaker with crushed ice. Don’t add the ginger beer (shaking and carbonation doesn’t go well).
  2. Shake and serve. Shake the cocktail vigorously for at least 30 seconds. Fill copper cups with ice cubes or crushed ice and pour the cocktail on top. Add ginger beer and stir. Garnish with a sprig of mint, jalapeno slices, and fresh lime wedges.

Recipe Variations

  • Non-alcoholic option (we love mocktails too!): Omit the tequila and replace it with equal parts club soda or a lime flavored soda water (like LaCroix). Instead of shaking, stir the ingredients together in a tall glass.
  • Pineapple Mexican Mule: Add 1/3 cup pineapple juice instead of all of the lime juice.
  • Different Liquor: Vodka, gin, orange liqueur all go really well in a mule. Use any of these if you have them on hand.
  • Skinny version: Use less agave and light ginger beer to top.
  • Kentucky mule: Swap the tequila for bourbon and omit the jalapeno.
  • Irish mule: Use whiskey instead of tequila and leave out the jalapeno.

What can I use instead of ginger beer?

Ginger beer really makes a Moscow Mule because of the spicier, deep ginger flavor. You could infuse fresh ginger into simple syrup for the same effect. I like light ginger beer for a low sugar option. In a pinch, ginger ale or a ginger soda water will work, but won’t yield the same results.

Is the ginger beer in a Moscow Mule alcoholic?

Although the name is deceiving, ginger beer doesn’t usually contain alcohol. It’s similar to root beer in that way. However, you can find spiked ginger beer if you want it, but I find this Moscow mule with tequila is plenty alcoholic.

Do I need a copper cup?

Copper is a great conductor of temperature, so when an ice cold Mexican Mule is poured inside it takes on that temperature and keeps the drink cold longer. It’s not absolutely necessary to have, but it does add to the experience!

Can I make it ahead of time?

If you’re serving a large batch for a party, you can combine the agave, lime juice, and tequila in a mason jar or pitcher one day in advance. Shake or stir it really well then finish with ginger beer right before serving.

Add the sliced jalapeño and a handful of ice, close the lid, and shake vigorously for 15-20 seconds to combine and help the jalapeño juices release into the margarita. You can also muddle the jalapeño into the margarita if you want them spicier. All the jalapeño to sit in the liquid to infuse while you prepare the glasses.
  • Add the salt and Tajin to a shallow bowl or dish. Run a lime wedge around a glass or mason jar and dip it upside down into the mixture, turning it and rolling it as needed to coat the top and part of the sides.
  • Fill the glass with crushed ice and pour the skinny spicy margarita over top. Top it off with soda water or ginger beer and garnish with fresh jalapeño slices and a lime wedge.
