This recipe is a keeper! I followed the directions exactly and it turned out great! The only change I’ll be making in the future is cooking the zucchini on the side so it gets that nice char and isn’t mushy. I was worried it’d be dry without a sauce but it doesn’t even need one. Probably wouldn’t be good leftover but was excellent made fresh. I used dried parsley which I threw in during the final 7 minute pressure cook time and it worked out great. Even my little kids loved it. Easy clean up and easy cooking!

Will absolutely be making again- all of my kids enjoyed it!

I used regular long grain white rice instead of jasmine rice. Did 1.5 cups of broth to 1.25cups of rice. Cooked on high pressure at 5 minutes. Let natural release for 10 minutes then quick release.

Rice was perfect. Veggies were a bit mushy- but that should be expected in these types of things. Next time I’d try boneless skinless chicken thighs.

This is my favorite recipe to make in the instant pot! I have been making it for years now and never get tired of it. There is so much flavor and I love that I can quickly prep this for lunches or dinners for the week.

The ingredients in this recipe are fantastic. My experience with the instant pot was disappointing, as I mentioned in a previous review. This is because I couldn’t get the timing of the rice and the vegetables to sync. I doubled the recipe and was not sure what to do about the cook time But, as one other reviewer noted – if this was made on the stove top, it would be amazing. That is what I will do next time. And maybe I will just do the rice in the instant pot by itself, using the chicken broth and lemon juice.
