These oreo mint cookies along with my <a href=\"https:\/\/whatmollymade.com\/chocolate-chip-pudding-cookies\/\">pudding cookies<\/a>, <a href=\"https:\/\/whatmollymade.com\/soft-frosted-christmas-cookies\/\">frosted sugar cookies<\/a>, and <a href=\"https:\/\/whatmollymade.com\/brown-sugar-pop-tart-cookies\/\">brown sugar pop tart cookies<\/a> all fit the bill. And they couldn&rsquo;t be more perfect.<\/p>\n\n\n\n<p> They&rsquo;re everything you want in a mint-chocolate cookie: <strong>thick edges, soft gooey centers, and plenty of crushed Mint Oreos in every bite.<\/strong> Here&rsquo;s why I love them:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>a <strong>bakery-style height<\/strong> (with no chilling)<\/li>\n\n\n\n<li>a <strong>gooey, melty middle<\/strong>,<\/li>\n\n\n\n<li>and the perfect <strong>mint-to-chocolate Oreo ratio<\/strong>.<\/li>\n<\/ul>\n\n\n\n<p>If you&rsquo;re looking for a cookie that tastes like a mint chocolate chip ice cream meets an Oreo cookie (but thicker and chewier), this is it.<\/p>\n\n<\/div>\n\n<div class=\"block-outline\"><div class=\"block-outline__inner\">\n\n<h2 class=\"wp-block-heading\" id=\"h-what-makes-these-cookies-so-thick-gooey-and-ripply\">What Makes These Cookies So Thick, Gooey and Ripply<\/h2>\n\n\n\n<p>After testing several rounds, here&rsquo;s what gives these cookies their signature texture:<\/p>\n\n\n\n<p><strong>Cold butter keeps them thick:<\/strong> Starting with cold, cubed butter controls spread and creates a thicker cookie. It prevents the butter from fully incorporating to give you tiny air pockets that steam while baking for a crisp outside and gooey (just underbaked) center. <\/p>\n\n\n\n<p><strong>A mix of cake flour, all-purpose flour, and corn strach creates softness:<\/strong> Cake flour&rsquo;s lower protein provides a tender interior while AP flour keeps the structure strong.<\/p>\n\n\n\n<p><strong>Shaping the dough into tall mounds = bakery-style height: <\/strong>A taller cone-shaped scoop melts on top of itself for thicker cookies.<\/p>\n\n\n\n<p><strong>Rounding the cookies with a cup makes the ripply edges.<\/strong> Swirling a large cup around the cookie right after baking gently tucks in the edges and gives that
